Simple Lime Squeeze

Gopher Glen Golden Delicious Sugarless Apple Butter

Core and quarter unpeeled apples to fill a sauce pan. Cook in a covered saucepan over low heat. Stir in a small amount of water (or even butter, a small amount of cider for enhanced flavor) just enough liquid to prevent sticking until the apples begin to make their own juice as they cook. Cook apples until they are soft and tender, about 15 minutes.

Put the cooked apples through a food mill, colander, or large mesh sieve to remove skins. Or, if you prefer, you can blend them skins and all in a blender. Simmer the pulp in a slow cooker or a heavy sauce pan, uncovered, or in a flat Pyrex dish in the oven at low heat until it is the desired consistency for apple butter. Stir occasionally.

Add any or all of the following spices to taste:
Cinnamon, nutmeg, allspice, ground cloves, dash of salt or sprinkle of vinegar.
