Golden Apple Salad

Combine:
2 medium-sized, cored and cubed, but unpeeled apples
1 13-ounce can unsweetened pineapple cubes (drained)
2 medium-sized carrots, shredded
Make a dressing of:
softened cream cheese
grated lemon peel
some of the juice from the drained pineapple
dash of nutmeg
dash of salt

Serve mounded on a liner of salad greens, top with dressing and sprinkle with cashews, peanuts or walnuts if desired.
